Healthy Apple Cake

A tender cake full of cozy spices and topped with fresh apple slices. It looks stunning and impressive, but it’s really easy to make and healthy too!

 This apple cake is delicious just simply served with a cup of lemon tea or served warm from the oven with yoghurt or the perfect custard. 

I Didn't have the small round tin I used the pan to bake the cake.

 

WHAT’S GREAT ABOUT IT


Apples are high in fibre (around 5 g) they contain both soluble and insoluble fibre which is great for your digestive system. The soluble fibre is known as pectin and the beauty of this fibre is that it  has the power to help lower cholesterol and stabilise blood sugar. 
 Coconut flour is high in fiber, protein, and healthy fats and is free from wheat and other grains. It is also low in sugar, digestible carbohydrates and calories, and has a low score on the glycemic index.
This is the special and healthy combination so far. 

INGREDIENTS (makes 8 slices)

- 1 tsp chia
 - 200 ml coconut milk alternative
- 2 red apple cutting in pieces
- 2 tsp coconut flour
- 1 tsp   brown sugar
- 1 tsp cinnamon
- 2 eggs 
- 1 tsp baking powder 

 


Method

- Preheat your oven on 180 C
- Place all the ingredients into the blender
-  Mix through until well combined.
- Grease The pan with coconut oil (you can use the tin if you desire) 
- put in the oven for 30 min
- enjoy it with a cup of coffee or a cup of tea
