This rich, creamy slow baked rice pudding recipe is the ultimate version of the classic comfort food. The old-fashioned method of slow cooking the rice in milk gives an incredible silky texture and home cooked flavor. This rice pudding recipe is wonderful for entertaining guests. Just slip the casserole into the oven two hour before they arrive to give the house an irresistible aroma and then serve a fantastic dessert later.
Ingredients
- 1 cup short-grain pudding rice
- 1 tin of coconut milk
- 1 litre of mik
- 1 cup of brown sugar sukrin
- 1 tbsp coconut oil
Method
- Preheat the oven to 150C/300F/Gas 2 and grease ovenproof dish with a little coconut oil.
- Rinse the rice under cold water and place in the ovenproof dish with the lid on. Place the coconut milk, milk and brown sugar
- Dot the coconut oil over the top and place in the oven for 1½ hours, stirring after the first 30 minutes . If the pudding still seems very runny, return to the oven, checking every 20 minutes, until it is loosely creamy but not runny. The cooking time will vary, depending on the type and depth of dish you use.
- When the pudding is golden brown on top and has a soft, creamy texture, remove from the oven and allow to rest for 10 minutes before serving.Enjoy it

Love rice pudding...in my country Venezuela we also have " arroz.de leche" and it is also a very traditional.dessert usually cooked by the grandmother in eberyfamily. I will try this recepi because it seems so very easy to make using the oven.
