I'm
a busy mum, it's nearly impossible to find the time to sit down properly at the
table to enjoy breakfast, especially during the week. The limited time I have
in the morning consists of rushing from one task to another and I barely have
any spare time to think about breakfast.
My usual
breakfast diary
My
alarm clock wakes me up at
6:30 in the morning and I get up to take a quick shower, get dressed, prepare
all the pack lunches and breakfast for my two daughters and my husband. I
usually have about 1:30
min to be ready to leave the house.
Many
times, I look at the clock and it is already 8:10 am. It’s already the time to leave
the house and I am usually late. I have to grab whatever I can in my hands to
take my children to school and eat my “breakfast" (i.e. a banana, a boiled
egg and a coffee in the car) on my way to the gym or work. I know that it’s not
the best way to start the day.
In
fact, I often feel lethargic early in the morning mainly because what you eat
for breakfast will determine your body’s energy source for the first half of
the day.
Therefore
I have decided to look for new ways to plan my breakfast better.

Luckily,
one day I was searching through the internet and I saw some amazing Quaker Oats
overnight oat recipes. I fell in love with the jars that you make the oats in;
they looked like a jar of goodness! The recipes are also the simplest and
easiest choice for a healthy breakfast. You just need to soak the oats in the
fridge overnight, ready for the following day.
I
was so excited that I couldn't wait any longer. I rushed to the shop to get
everything that I needed .....got home......and all done within 5 minutes ready
for the following morning!
The
following morning
I
was feeling over the moon. The perfect way to start the day with a fresh and
enjoyable breakfast ... finally, after years I had time to enjoy my breakfast
in the garden, sitting down properly at the table, in the stunning spring day,
enjoying my Quaker kiwi coconut overnight oats. This was my GLOAT MOMENT.

What
I think makes overnight oats so special are the layers. It’s not essential, but
it adds that extra ‘wow’ to your breakfast.
If
you would like to know how to make the perfect overnight oats, you should check
out my tips below:

Prepare the overnight oats the night before and ensure that you place the jar
in the fridge to have a better taste in the morning.

It's better to use a glass jar with a lid on.
*
Soak one part oats with one part liquid. The liquid can be milk, almond milk,
yogurt, etc.
*
Keep it in the fridge.
*
You can change the ingredients to make it unique. You can use strawberries,
banana, kiwi, mango, avocado, cocoa, natural yogurt, coconut milk, chia,
linseed, oats, chestnuts or whatever your imagination allows!

Overnight Oats
Ingredients
*
40g Quaker Traditional Rolled Oats
*
120ml cup coconut milk
*
1 tbsp stevia
*
1 tbsp honey
*
2 kiwis
1.
Slice the kiwi
2.
Start adding the oats to the jar, then add the milk, stevia, coconut, kiwi and
coconut
3.
Place each ingredient one at a time into the jar
4.
Cover it and place in the fridge overnight
5.
In the morning, add a few tablespoons of milk to the jar if the oat mixture is
too thick. Stir all the layers together. Top it with honey and fresh fruits

Enjoy!
