Being mum of two, blogger, wife and working in different schools during the day, that it's not always so easy to manage the food for my family. 

Due my intense daily routine I have been struggling to find recipe inspiration.

Fortunately, I have discovered a delicious range of recipes ideas in the HelloFresh website and app /. The website and the app helps me to organise the menu and gives me many inspirations. 

From their advice, I developed an easy system for myself and my family to eat home-cooked food every night. 

Now, we are healthier and in control of what we eat. I have an incredible level of energy I never used to have, and that helps me be more productive and confident at work than ever before. My children are eating nutritious, balanced diet. We are all happy and healthier. 

It means that having a food prep day is essential to keeping healthy eating habits a priority, losing weight, and maintaining a healthy weight. When healthy foods are ready and available and you have the HelloFresh app and their website to guide you to make different dishes the life become much easier. 

It also reduces the stress and anxiety of trying to figure out EVERY SINGLE DAY what to eat. 
Using the HelloFresh app advice, I realised as easy as to prepare my favourite dishes using fresh and healthy products. 

The app can be used on IOS and Android apps.

I am glad to share with you one of my favourite recipes that I have recreated from HelloFresh App:
Quinoa Risotto 

What I really like in risotto its creamy, vibrant colour, taste, that you can transport all your favourite ingredients for a unique dish.  
I was always concerned about the amount of carbohydrate that they have in a single meal. Through HelloFresh I had the great idea to create a healthy alternative of preparing the dish ... without rice!

I replaced the rice for quinoa. It did work very well. Such an amazing experience. 

Quinoa is a nutrient rich seed with great health benefits, it's high in protein, it is a naturally gluten free. Each serving of quinoa also comes loaded with protein and fiber, which can help you lose weight. It’s also very high in minerals and promotes gut health with its inflammatory abilities, it also helps you to keep your cholesterol and blood sugar in a good level.

To make the recipe even more special, I added the roasted parsnip and a delicious and juicy salmon.

Roasted Curried Parsnips
with Quinoa and Salmon

Serves 2

1 cup dry quinoa
1 1/2 cups water
1 teaspoon coconut oil
1/2 onion, chopped
 2 garlic cloves, minced
1/2 cup water
salt, black pepper, curry 
1 tbsp ricotta 
1 tbsp Parmesan cheese 
1 cup spinach, roughly chopped

Melt the coconut oil over medium heat and sauté the onion for 5 minutes. Add in the garlic and the spices. Combine the quinoa and the water in a sauce pot over low heat, cover and bring it to a boil. Allow to simmer for 15 minutes, or until all of the water is nearly absorbed. 

While the quinoa is cooking, add in the fresh spinach and stir well until the spinach is wilted. Add the ricotta and the Parmesan to create a silky smooth dish.
