Chocolate Cake

My Birthday

I consider myself luck to have the birthday in the summer holiday. I can have the privilege to choose where I want to celebrate my birthday and how I want celebrate it.

Even having the opportunity to choose between many places to go, I always choose to celebrate my birthday with my family at my mums house in Zurich .

I have celebrated my  birthday (21/08) this year with so much joy…thanks to my dearest hubby , family and friends. I had a weeklong celebration and it was awesome!!! started the Sunday before my birthday, on the 14/08 in Barcelona ....

Followed by my nephew Leonardo birthday in Basel

and ended on Sunday 21/08 which is why I didn’t have the time to post a blog . So this is was really busy in this awesome Birthday Week that I had forgotten completely to post the birthday cake recipe for you .

Never mind, never is late for a slice of chocolate cake.

It’s worth to mention that I had the choice to buy one beautiful birthday cake, but my daughters don’t enjoy the taste, most of the cake from the Swiss shops taste a bit of liquor . So I decided to make a homemade chocolate birthday cake covered with delicious bregadairo (one of the most traditional treat in Brazil).

It was the best choice so far, the chocolate cake was much cheaper and everyone enjoyed it.

I will give you two recipes, non healthy and healthy one. The choice is yours . Please don’t forget to comment below of which one have you chosen. I will be glad to hear from you.

2 cups of wheat flour
1 cup of sugar
1/2 cup of chocolate powder
1/2 cup of cocoa
1/2 cup of oil
1 cup warm water
2 eggs
1 tablespoon baking powder

Mix all the ingredients except the baking powder, beat everything for more than 4 minutes until the dough is very smooth (knew that the more you hit the dough, the more the cake becomes cuddly) then add  the baking powder into cake and beat for 30 seconds. Pour into the baking tray  and place into the oven for about 40 minutes in 170C. While the cake bakes, you can make the topping.

Instead of make the Brigadeiro in small balls , I made it  for the topping of the cake . Brigadeiro is a soft chocolate sweet made with condensed milk and cocoa. It is present in every Brazilian birthday party. Every Brazilian knows brigadeiro, and everyone who tries it likes it.
It is easy to make brigadeiros, but it can be tricky to get the perfect consistency.

1 can sweetened condensed milk
1  tablespoon butter
3  tablespoons  cocoa
    chocolate sprinkles

  1. Over medium-low heat, stir vigorously the three ingredients.
  2. Cook the mixture until it thickens enough to show the pan bottom during stirring (it will be firm enough to stay together and not spread) Pour into a greased dish and let cool to room temperature (or chill a few minutes in the fridge) Grease your hands with butter and take small amounts of candy and form into 1 1/2 inch balls.
  3. Roll the balls in chocolate sprinkles to decorate.
  4. If the balls don't hold their shape, cook an additional 5 minutes until it thickens up more.

Leave me a comment if you like the celebration and the treats
